Happy New Year!

Typically I have a laundry list of New Year’s Resolutions, but for some reason this year I can only come up with a few. The one I am determined to stick to is to bake more. Thanks to some wonderful Christmas gifts, I am further inspired to get back in the kitchen and think of new ideas. 

I know I have posted “burgers” and “fries” cupcakes before, but I was very excited to put them together. The woman at Shake Shack was kind enough to give me some extra goodies with my burger to make these cupcakes look particularly realistic. 

The reason I post these today is because the “burger” cupcakes were the first idea I baked for Reality Bites, so it only felt fitting they begin 2013. Also, a trip to Shake Shack may or may not have happened on New Year’s Day. It was closed, but that was probably best for my other resolutions…

Christmas is less than a week away and I am finally done with my shopping! Most everyone’s gifts are wrapped and ready to go under the tree. I have checked and rechecked my list, and now I am just incredibly excited to give everyone their presents!

As mentioned, my cupcake to-do list was quite lengthy, but I managed to test out the last few ideas in one fell swoop. These are all ideas I have seen on Pinterest, my go-to for holiday cupcake ideas. Of the bunch, the reindeer (that my mom mistook for bears…thanks, Mom!) are my favorite. They remind me of my favorite classic Christmas movie, Rudolf the Red Nosed Reindeer. It first aired in 1964! But no matter how old it is, or how many times I see it, it still gets me in the Christmas spirit.

It’s about that time of year when all of the believers are busy working on their Christmas lists for Old St. Nick. I’m not sure if kids today still send letters, or do they email or text Santa? Either way, I am working to try out all of my holiday cupcakes in advance and this was the first one on my list!

This Saturday is Santacon in NYC, a day filled with merriment and thousands of Santas and incredibly confused children. Santa Clauses are coming to town…

Leftovers

I have featured the corn on the cob and the mashed potatoes cupcakes before, but I had never attempted these “turkey legs”. After bouncing around trying to find supplies (bone molds are not as easy to come by as I had hoped), I sat down and created a system. From melting candy to mold it into the “bones”, to dipping the cupcakes in graham cracker crumbs, these “legs” were not the impossible feat I had imagined. I managed to get them boxed up and ready to go, along with a few “ears of corn” just in time! 

Every year, Thanksgiving is the perfect excuse to eat until you feel like you are going to be sick…for days after it’s over. Even though we didn’t have any Thanksgiving dinner leftovers at my house (we go elsewhere for the holiday), I still managed to overindulge all weekend- there may have been a few of these cupcakes leftover.

Once Thanksgiving passes, it is officially the holiday season. The Rockefeller Center Tree Lighting is tonight, sending the city into a frenzy of lights, ornate window displays, and endless festivities. Here we go, again!

Thanksgiving is one of my favorite holidays. Being surrounded by family and eating tons of delicious food makes for an all around wonderful day. 

These “mashed potato” cupcakes are just the beginning- I have so much more to bake! I am thankful for so many things this year, but today I am particularly thankful that my sister has offered to help me get the last holiday order done. What are you thankful for? 

Spaghetti and Meatballs

My weekend starts tonight, so in my excitement/inability to sit still, I decided to bake. The “spaghetti” is butter cream frosting, while the “meatballs” are chocolate doughnut holes covered in strawberry jelly “sauce”. I have been wanting to try this idea for a long while, so this week I had the time and the perfect excuse. 

My younger sister’s high school soccer team is off to compete in the State Championships this weekend (go, Lou!). Her team usually has a pasta party the night before a big game, so I put my own spin on it. Hopefully she won’t look like these two after all of the carbs, but I know I probably will once the long weekend is over. 

Comfort Food Cupcakes

As we get into November, the weather is feeling less like fall and more like winter. I can’t believe it already snowed! Once the temperature dips, all I want are the seasonal comfort foods that warm you from the inside out. 

When I was little, my mom used to make pancakes for breakfast on special occasions. She would also catch me pouring syrup right from the Aunt Jemima bottle into my mouth (channeling this movie?). There is something about pancakes that make everyone happy- carbs, butter, sugar, etc.- you can’t really go wrong. They are a breakfast favorite for winter days. 

For those of you that only eat the tops of muffins (Mom), this “short stack” is perfect for you. By simply cutting the tops off of yellow cupcakes and covering them in caramel sauce, these “pancakes” make for a sweet and simple treat.

Hot Dogs

I can’t really say I’m a big baseball fan, but with the World Series having just ended, I figured it was a good excuse to try out these “hot dog” cupcakes!

I love hot dogs- they remind me of summer BBQs- but they also remind me of going to baseball games when I was younger. I couldn’t and still can’t quite sit through a whole game, but I am sure if you live in Detroit or San Francisco, this has been a great time to be a baseball fan.

Along with the sliders, the “hot dogs” required that I make two separate batters- one for the “buns” and another for the “dogs”. Using a special donut mold, a loaf tin, and both yellow and red velvet cake, these “hot dogs” were simple to make once everything came out of the oven.

Interestingly enough, GQ Magazine’s November issue has an article on the sport of competitive eating, with the most famous contest being Nathan’s Hot Dog Eating Contest, held on Coney Island every Fourth of July. From what I’ve heard, you shouldn’t eat more than a few hot dogs every year (I give myself a pass and have one or two every summer), but I’ve never heard anything about hot dog cupcakes. Game on.

The Great (Mini) Pumpkin

This is my favorite time of year for so many reasons- the clothes, the holidays, but most importantly, the food. I am a sucker for pumpkin flavored foods/beverages (with the exception of beer), so I could not wait to make these pumpkin cupcakes. The batter is truly pumpkin flavored, and the icing is cream cheese (my new favorite), so these are essentially my ideal fall treat. 

 I’m not going to sugarcoat it (pun intended), these were a challenge. The mini bundt cakes needed to be frozen before they could be cut to ensure the two halves fit together cleanly. Then, as we (my sous chef sister and I) frosted these, they began to fall apart as they thawed. In our efforts to speed things up, orange frosting got everywhere, but I think we managed to get a little more on our “pumpkins” than we did on the counters, floor, etc. But, per usual, the ends justified the means, and we were both excited with how these turned out.

These may not be the greatest pumpkins, (this time of year always reminds me of Charlie Brown), nor are they the biggest (someone beat the world record for biggest pumpkin this year…2,009 pounds!), but they were pretty delicious.

It’s been a long week- I swear the dreary weather made every day feel longer than the one before. But, it’s finally Friday!

Someone I work with asked that I make these sushi cupcakes for her coworker’s birthday. Her coworker happens to be pregnant, so the sushi cupcakes were meant to replace the real sushi she can’t eat for a few more months! It was such a sweet idea, so I was happy to oblige. 

I have only made these at my family’s house in the suburbs because of all of the space/materials they require, but I somehow managed to get them done in my apartment. I know we are going to find Nerds in every crevice of our kitchen for weeks to come, but it was worth it. 

I always photograph my cupcakes in the morning (I love the lighting in my kitchen), so I sent the pictures to my mom and sister who helped me compile all of the ingredients (thanks, guys!). On our text chain, I was soon neglected and they were discussing dinner. They decided on sushi.

I guess if these can cause a craving for actual sushi instead of cupcakes, the week is ending on a good note.

Autumn officially starts on Saturday, and I couldn’t be happier. I am very ready for the cooler weather and everyone’s return to the city. I have not spent a full weekend in NYC since before Memorial Day (absurd), so this weekend marks a much anticipated Saturday/Sunday in the Big Apple- I am done with packing a weekend bag. 

You can tell the seasons are in motion by the change in people inhabiting Manhattan. All of the interns/college students have gone back to school (lucky), and there are kids and strollers racing down the streets in every direction. I can remember going back to school, at every age, and getting excited for new clothes, classes, and all of the fun activities that come in the Fall. 

To align with this back to school/back to the city theme, I decided to make these “apple” cupcakes. Most of the recipes I found suggested using chocolate glazed or plain mini doughnuts, but I stubbornly decided to go with powdered. I recommend listening to everyone else- the powder proved to be difficult to work with while frosting these! Aside from a few minor hiccups, these cupcakes came out just as I imagined. The pretzel sticks (Tootsie Rolls are another option) added a little salt to the sweet overload, but the candy leaves really pulled the whole idea together. 

This weekend my plans are filled with friends I haven’t seen since before the summer started, outdoor festivals, and hopefully tons of Fall foods. An apple a day…

New York State of Mind

Today is one of those days that everyone asks one another, “where were you?”. I was in my 8th grade math class, probably griping over a problem I couldn’t solve. Today is also one of those days that I can’t allow myself to complain about anything. Every day issues seem trivial when you think about what we were experiencing 11 years ago. As a New Yorker, but more importantly- an American, my sense of pride is incredibly heightened. I secretly suppress tears every time I hear someone sing the National Anthem (no one can do it as well, or with more enthusiasm than Whitney), so seeing the videos/pictures/posts inundating Facebook, Twitter, and all social media today is particularly moving. It all really proves that despite all of the issues we face, Americans can still band together. 

Check out this video posted on the blog of my friends at Spogo. I had forgotten about this moment, but it didn’t take long for the memory to resurface. Never forget.

Pizza Bite

I love pizza. Can not get enough of it. I could eat pizza for breakfast (preferably cold), lunch, dinner, etc. As I have mentioned, I don’t discriminate- microwave pizza, delivery, homemade- as long as it’s dough, cheese, and sauce, I am happy. But, if asked to pick my favorite pizza spot, it would be between the two beloved pizzerias in my home town. One of them makes a chicken cesear salad slice that is amazing.

This “pizza bite” reminds me of these what are now called pizza rolls, that my elementary school used to serve. They were all the rage, and I can remember grimacing at the healthy lunch my mom had packed me. Looking back, she had the right idea, but I still can’t help but want these when I see them again.

Now, I was certainly not deprived of my favorite food. I feel like for a lot of families, Friday nights are pizza night, and we were certainly one of them. After a long week, not many people (especially myself, and even more so my mom) want to cook. At our house, pizza is cross generationally enjoyed, so it always made the whole family happy and got the weekend started right.

With the month winding down, I took a look back at my calendar and realized August has been filled with birthdays- both at work and with friends. Two of the girls on my team have birthdays within a few weeks of each other, so instead of baking twice, I decided to consolidate the celebration. One of Jen’s favorite foods is Swedish Fish, and Allie is a big fan of french fries, so “fish and chips” seemed appropriate!

The “fish” were simple cupcakes, a little food dye added to cream cheese frosting, and Swedish Fish I attempted to make look like they were swimming (not chopped in half as it actually appears!). The cupcakes with multiple fish remind me of Dr. Seuss’ book "One Fish Two Fish Red Fish Blue Fish", one of his many books that was read to me growing up.

As for the “chips”, I had been wanting to try making cupcake french fries ever since I saw them in Food Network Magazine. I decided not to use pound cake, but instead used the excess batter from the “fish” cupcakes to bake a mini loaf cake. I was very excited to see how these “fries” would turn out, so it took a lot of self control to let the loaf cake sit in the fridge for a few hours, making it easier to cut. 

It was all worth the wait- the “chips” look pretty realistic, sitting in cups I bought at a craft store by my apartment, and dipped in “ketchup” I also used for the sliders. When I say I really like ketchup, I mean I put enough on burgers, fries, etc. that I have been asked if I would like a side of real food with my ketchup, so it’s no surprise I took the same approach to the frosting for these “french fries”.

As I presented them to the girls, some of the “fries” looked like they were drowning in “ketchup” more so than the beheaded Swedish Fish. But if you ask me, there can never be too much ketchup or too much frosting.

With Labor Day weekend only two weeks away (the summer truly flew), I am already getting excited for another long holiday weekend. I am heading up to Maine, where I am told we will essentially be in the middle of nowhere, spending a lot of time outdoors. I am not opposed to becoming more “one with nature”, but let’s just say I still struggle to kill any bugs found in my apartment. Living in Manhattan I often forget that where there are creatures, there should be a wilderness. 

With that, talk of the trip is reminding me of childhood camp-outs and the food that came with them. These “s’mores” don’t look like your average cupcake, but the “graham crackers” are indeed cupcake, while the chocolate (Hershey’s) and marshmallows are true to a real s’more recipe.

I can’t wait to spend a few days not worrying about checking my email, Facebook, etc. and getting back to the more carefree activities I remember enjoying so much when I was younger. If I have any say, making real s’mores will fall into this category, as they are as simple to make (as were these) as desserts come. The more burnt, melted, and gooey they are, the better.

I have to thank my friends, family, and coworkers for being excited enough about my cupcakes to spread the word about them. A coworker saw my cupcakes via Instagram (thank you, Sara!) and asked that I make “girly” cupcakes for her daughter’s naming ceremony party. 

Although I haven’t much swayed from cupcakes that look like other foods, this idea felt like it could sneak its way under “Reality Bites”. Also, oddly enough, her daughter and I have the same name, so it felt like a sign I should make them.

The request was for three dozen, and I have to admit that the night before I had to bake them, I started getting nervous as if I had a big test the next day. I wasn’t sure I was prepared. I have made “flowers” before, but none of varying color- which is why you can see I managed to dye my finger tips pink, and I have never made this many cupcakes at once. I felt I was treading in uncharted waters with how long they would take.

Thanks to the patience and amazing helpfulness of a few special people, these cupcakes became more of a fun Friday night project. I will admit, I get stubborn and don’t always know how to allow others to help me, but these “flowers” would not have been completed if I had not had such great backup.

The last few pictures of these reminded me of the poppies scene in the Wizard of Oz, but the only way these cupcakes would cause anyone to fall sleep would be if they put themselves in a food coma by eating them all on their own. 

Go Team USA!

Since tonight marks the beginning of the 2012 Summer Olympic Games in London, I am feeling quite patriotic, and incredibly thrilled that it is finally Friday.

I am looking forward to watching the opening ceremony tonight, and secretly streaming the games at work over the next few weeks (did you know this is the first year you can watch the games online?). Baking in Bulk

I feel as if all I have been doing for the past 5 days is bake- like I am training for some kind of Cupcake Olympics someone neglected to mention (unlike the intense media and advertising lead up to the Summer Games). I try not to complain, as I truly enjoy my time in the kitchen, but I must admit- it can be a little tiring with a separate non-cupcake related full time job!

But it is all worth it when I hear the responses to my baking. Since last Wednesday I have baked a special treat box for one of my favorite couples (he is leaving for business school, so his going away gift was “New York bagels for two”), a birthday party for a friend of a friend, and even a client meeting that was not my own. It has been an exciting few days, and everyone seems to want a “bagel” for themselves!

I am pretty proud of myself for perfecting my presentation, and figuring out how to make good use of my time (before work, after work, etc.) to make sure these orders were filled. I am particularly relieved to have proven to myself that I continue to work best under pressure. These few days have reminded me of my school days- getting the best grades when I was busiest. 

Below you will see a few shots I asked the party goers to send me as they enjoyed their cupcakes. I would like to assume by the looks on their faces, I got an “A”.

Egg Sandwiches

While making the bagels, I thought of this idea, as most people can’t turn down a good breakfast sandwich (especially from a New York deli…yeah, you get it. I’m from NY).

The mixture of ingredients made these even tastier than I imagined, and I was excited to show them off to my brother, who is obsessed with a good egg sandwich. They never really did it for me (I prefer a lunch inspired bagel/sandwich) but everyone raves about them, as they did about these cupcakes. If I do say so myself.
