TGIF! And here’s to the first week of fall, the first football game of the NFL season, the first week of school (for the young ones), and the second week of the US Open. You’re off to quite the start, September.

Even though I’m pretty focused on this week being over (and sleeping…), I’m still thinking about my Labor Day weekend. RBC spent the holiday up in Hingham, MA, and I had the.best.time. The icing on the weekend is that the lobster roll cupcake was featured on Food In The Air's Instagram. To thank them, the gang put some bagel cupcakes (I brought as a gift for the hosts) in the air. Check out FITA and RBC here! I’m hungry just looking at them…

With fun weekends, comes not as fun mornings, so I made this BEC bagel cupcake in honor of the best hangover cure around. It’s Friday, and I’m sure we all could use one.

August was a crazy month- RBC moved (again, ugh), adding to the insanity of trying to soak up all of the travel and fun of the last month of summer.

Last weekend I had an impromptu BBQ at my house, and naturally before I had even bought the burgers and hot dogs, the cupcakes were made and already out for display. I don’t often mess around with frosting flavors, but had been craving peanut butter so I gave this frosting a go. To say it was addicting is downplaying it. These chocolate cupcakes hit the table for a first round after I had cleared the chips and dips (before dinner) and then again after dinner. And then again muchhhh later in the night.

While I much prefer to make the typical RBC cupcake that teases the tastebuds, it was a nice way to mix things up. Kind of like trying this temporary tattoo craze. I ordered that cupcake tattoo from Tattly.

Here’s hoping everyone enjoys their last weekend of summer! -A

Funfetti For the Win

I follow @nycdining on Instagram, and she has posted a few times about Tompkins Square Bagels’ birthday cake cream cheese bagel, and every single time I promise myself I will go and try this enigma out. While I have yet to try the real deal, I decided to recreate a cupcake version of my own. Behold, a funfetti cream cheese bagel cupcake.

I have to admit, this is one of my favorite, if not my favorite cupcake I have made thus far, solely based on taste. This frosting is addicting, and I found myself sneaking bites throughout the day to avoid a serious sugar rush.

Sweet Shots

Last weekend was a time for celebrating- from a 21st birthday, to a dear friend’s wedding, I was gearing up for the festivities all week. The more excited I am, the less capable I am of sitting still, so I made these cupcake shots for the occasions.

Mini cupcakes (and shots) are dangerous- it’s hard to keep track of how many you’ve had! Over the course of the celebrations, I managed to indulge in both. To quote LMFAO, “Cup(cakes) in the air, everybody let’s take shots”.

House of Cards

All images ©2014 reality bites cupcakes inc.

What do you bake for a 90th birthday party for a woman who loves bridge and golf? A round of golf cupcakes, and a deck of cards…cupcakes. Full disclosure, the cards are actually brownies, but in order to get their shape just right, brownies were the perfect way to go about it.

This order reminded me most of two things: my brother, who is an incredibly skilled poker player, and House of Cards. The show sucked me in, and I could not stop watching it. Kevin Spacey quickly made my list of favorite actors after season 2, and Robin Wright is just on point. Can you tell I enjoyed it? Best.scene.ever.

If you play your cards right…

Milky Way Madness

So, I tried melting down candy on the stove for the first time. I’m actually upset I hadn’t thought to do it before. Inside these chocolate cupcakes is a mixture of melted down Milky Ways, cream cheese, butter and sugar.

March Madness is a huge deal in my office (and everywhere else) and while I have no idea what’s going on, I felt like I contributed to everyone’s enthusiasm when I brought these in for a coworkers birthday.

I think I’m still on a sugar high from baking these, and my apartment is covered in salted caramel which is incredibly messy and delicious. Let the madness continue.

It’s that time of year again! Not only is St. Patrick’s Day rapidly approaching, but the Girl Scouts are back in action. Clearly I’m partial to cupcakes when it comes to baked goods, but I find it hard to resist buying a box or two of my favorite Girl Scout cookies, Thin Mints.

If you’re not putting Thin Mints in the freezer before eating them, you’re not living. And while I’m on frozen treats, I’ve surely mentioned my affinity for ice cream, so when deciding what to bake next, I tried to mix them all together. (For some reason, I’m reminded of this book.)

These mint chocolate chip ice cream cone cupcakes (say that ten times fast) are made of mint dark chocolate cake, frosted with mint chocolate chip frosting. I thought I may have overdone it with the mint extract, but these taste like a Thin Mint or Andes in cake form.

As I gear up for St. Patrick’s Day, I’m obviously gravitating towards baking anything green. I have a few more tricks up my sleeve, along with parties to bake for this weekend so I’m looking forward to the fun and festivities.

Happy Friday and Cheers!

Happy (almost) Valentine’s Day! Since I can’t stop listening to the Beyonce song “XO”, I did not bother with any other conversation heart sayings. While it took me multiple attempts last year to master these cheesecake sweethearts, this time around it was one and done.

Aside from the weather, I’m kind of loving 2014 so far. Not only was RBC featured in the University of Richmond’s Winter 2014 magazine, the ring box cupcakes from the previous post were used in a beautiful winter wedding photo shoot by Whyman Studios. Not bad, 2014, not bad.

Hoping everyone has a great Valentine’s Day (it’s a Friday, no pressure), and an even better long weekend.

If you know me, you know that I really love pizza. I’m pretty sure I’ve made that clear, so I wanted to take another stab at a pizza cupcake. I’ve kept this idea on the back burner, but was inspired to finally go for it by a recent debate about where you can get the best pizza.

My favorite pizza places are on Long Island, but I’m also a huge fan of these spots in NYC: Two BootsArtichoke (go hungry), Otto and Pulino’s. What’s the biggest pizza chain where you live? BuzzFeed can help you with that.

My wonderful roommate turned 25 on Sunday, and in the spirit of favorite foods, I made her a “wheel of cheese” cupcake to celebrate. The girl could live on cheese and crackers.

This was my first time working with fondant, and while I don’t like the taste, it certainly did the trick in making this cupcake look exactly how I wanted it to. I also couldn’t help but laugh the entire time I was baking with this clip playing over and over in my head.

We had such a fun weekend celebrating, so I wholeheartedly condone dragging your birthday out for as long as possible, S…birthday month, right?

Happy Birthday Roomz! RBC thanks you for your continued hospitality, patience, and great love of cheese.

Chocolate Covered (Red Velvet) Strawberries

What: Red Velvet Cupcakes

Where: Reality Bites HQ

When: If you follow Reality Bites on Instagram, you saw that I was making these while watching the Academy Awards

Why: For a birthday girl whose favorite foods include red velvet cake and chocolate covered strawberries

How: Red velvet heart shaped cupcakes, cream cheese frosting dyed red, mini chocolate chips, mint leaves, and of course melted chocolate

Simple but incredibly decadent at the same time, these cupcakes were rich and delicious. While red velvet cake really isn’t that complicated to make, here is an informational feature on BuzzFeed about this popular cake.

"You’re a human being, and life is wonderful, so eat the damn red velvet cupcake." Whatever you say, Emma Stone.

Ellie

My amazing grandmother turns 90 this week, but we celebrated over the long weekend so as many of her 6 children and 18 grandchildren could make it as possible. She continues to live an incredible life, knowing more about sports, politics, history, people and life than anyone I know. She remembers everything and everyone and ceases to amaze me on a daily basis.

One of the first taste testers of Reality Bites, Ellie, as my dad fondly called her, is my inspiration to live as gracefully and selflessly as she does.

After a few of us helped her blow out the candles, it was a group effort to almost finish off this cake. I didn’t bake it- I’m sticking to cupcakes- but I will admit it was delicious. Do you think it was big enough?!

Overall the day was fittingly special, filled with wonderful conversation, cousins, cocktails and of course, cake. I can’t imagine a better person to celebrate.

I Spy Reality Bites on CakeSpy!

image

I am THRILLED to be featured today on CakeSpy! The head spy of this lovely site is Jessie Oleson Moore- a freelance writer and illustrator whose writing and illustrations have appeared on DailyCandy.com, Serious Eats, and Taste of Home just to name a few! CakeSpy was even named one of Gourmet’s Favorite Food Sites, so I am incredibly excited to have been interviewed for today’s post!

In an effort to pick the CakeSpy’s brain, I had a few questions of my own for Jessie:

If you could only eat three foods for the rest of your life, what would they be?

Crumb cake, Birthday Cake, and Brussels Sprouts.

What was your first job? How did it help you get where you are today?

My first job was “Flower Girl” —official title—at Mueller’s Flowers & Gifts in Manasquan, New Jersey. My job, when the flowers came in from the wholesalers every day, was to prepare them for the store. This involved husking gladiola leaves like corn, de-thorning roses, and removing stamen from lilies. Probably the biggest influence this job had on me was that I always smelled good at the end of my shift, even if I’d gotten sweaty or something. It’s highly likely that this made me gravitate toward professions that would make me smell good. As CakeSpy I bake a lot, which makes me frequently smell like birthday cake batter and/or brownies.

What’s the sweetest thing anyone has ever said to you?

It’s more of an act than something said I suppose, but in recent memory, someone said “I’m sweet on you” by decorating the stairwell of my apartment building with like a hundred hearts. Um, don’t tell my landlord that had to do with me, I really want my deposit back.

If you were to decide today what cake you will have on your 100th birthday, what would it be?

Same one I have almost every year: three tiers, white cake, pink frosting. Lots of flowers and scalloped frosting and stuff. Oh and we’ve gotta have the Birthday Mouse on top. (See below!)

Birthday Cake

As we creep into mid January, I can’t help but be overly excited to have things to look forward to other than Spring. Sunday was my wonderful friend Valeria’s birthday, so in her honor I made these mini triple layer cakes. From wanting to try a few new things in the kitchen, to her birthday celebration, I had been counting down to the weekend more so than usual.

The recipe I followed for the cupcakes claimed to be the “best birthday cake recipe”, and I have to admit that it is my favorite so far. The cake wasn’t too sweet, but was instead the perfect pairing with the sugary frosting and sprinkles.

I saw one idea for these mini triple layer cakes on Pinterest that recommended baking the cake in washed out cans to create the cylindrical shape. Unfortunately, my attempt at this was a failure- the cake got stuck in the cans, which then created a frustrating game of trying to pry it out without ruining the shape…i.e. impossible. Instead, I had to go with my backup plan. After baking the rest of the batter on a cookie sheet, I used a circular cookie cutter to make the layers. So.much.easier.

In the end these came out even better than I had hoped- I am admittedly proud of myself. The weekend’s celebrations were a blast and these cupcakes ended up being a success. Is it Friday again yet?
